Title: Swedish Rye (Natural)

Yield: 3 Loaves

3cWarm water
2tbYeast
1/2cHoney
1/2cMolasses
1 1/2tsAnise
2tsGrated orange peel
6cWhole wheat flour (approx.)
1/2cOil
1tbSalt
4cRye flour
  Sprinkle of corn meal

Combine water, yeast, h;oney and molasses. Let sit for about 5 minutes until the yeast rises to the surface. Add anise, orange peel, 3 c. whole wheat flour. Stir thoroughly. Let rise 15 to 30 minutes. Stir down. Add the oil, salt, rye flour, and enough whole wheat flour to make a fairly stiff dough. Knead thorughly. Let rise until double in bulk, usually about 1 hour. Punch down. Shape into 3 round loaves. Placeon cookie sheet sprinkled with corn meal. Cut a slit in the top of each. Let rise until amost double, abt. 1/2 hr. Bake at 375 abt. 40 minutes or until done. Cool on a rack.
